Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
Mix thawed hash browns, melted butter, and salt in a large bowl. Spread half of this mixture in the baking dish.
In another bowl, combine sour cream, cream of chicken soup, and shredded cheddar cheese. Spread this mixture over the potato layer.
Add the remaining potato mixture on top. Sprinkle extra cheese if you like.
Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for another 30 minutes until the top is golden brown.
Let the cheesy potatoes cool for 10 minutes before serving. This allows the dish to set and makes it easier to serve.
You can add crispy bacon bits or diced onions for extra flavor. Feel free to experiment with different cheese types too!
Tips, Tricks & Storing
Shred your cheese yourself for the best melty texture. Pre-shredded cheese often has anti-caking agents that can make it grainy.
For extra crispy tops, broil your cheesy potatoes for 2-3 minutes at the end of baking. Keep a close eye to avoid burning.
Try mixing in some crispy bacon bits or diced ham for added flavor and texture.
Make ahead tip: Prepare the dish up to a day in advance, cover, and refrigerate. Let it sit at room temperature for 30 minutes before baking.
Leftovers stay good in the fridge for 3-4 days. Reheat in the oven at 350°F for about 20 minutes or until hot throughout.
To freeze, let the dish cool completely, wrap tightly in foil, and freeze for up to 3 months. Thaw overnight in the fridge before reheating.
For a lighter version, you can use low-fat cheese and Greek yogurt instead of sour cream.
Add a dash of cayenne pepper or hot sauce for a spicy kick to your cheesy potatoes.
