Ingredients:
- 1 pound ground beef

- 2 cups milk
- 1/4 cup flour
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions:
Brown the beef in a large pot. Drain and set aside.
In the same pot, sauté onion, carrots, and celery until soft.
Add potatoes and broth. Simmer until potatoes are tender.
Stir in beef and 1 1/2 cups milk.
Mix flour with remaining 1/2 cup milk. Add to soup and stir.
Bring to a boil, stirring constantly until thickened.

Meatball Soup

Ingredients:
- 1 pound ground beef
- 1 egg
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano

- 8 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup small pasta (like orzo or small shells)
- 2 cups mixed vegetables
Instructions:

Bring broth to a boil in a large pot.

- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
Instructions:
Heat oil in a large pot over medium heat. Add onions and cook until soft, about 5 minutes.
Add ground beef and garlic. Cook until beef is browned, breaking it up as it cooks.
Stir in chili powder, cumin, and oregano. Cook for 1 minute to release flavors.
Add beans, diced tomatoes, and tomato sauce. Stir well.
Bring to a simmer and cook for 20 minutes, stirring occasionally.
Season with salt and pepper to taste. Serve hot with your favorite toppings.
Lasagna Soup
You’ll need:
- 1 lb ground beef
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can crushed tomatoes
- 4 cups beef broth
- 2 cups marinara sauce
- 2 tsp Italian seasoning
- 8 oz lasagna noodles, broken
- 1 cup shredded mozzarella
- 1/4 cup grated Parmesan

Brown the beef in a large pot. Add onions and garlic, cook until soft.
Pour in tomatoes, broth, marinara, and seasoning. Bring to a boil.
Add noodles, simmer for 10-12 minutes until tender.

Taco Soup
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes with green chiles
- 1 can black beans, drained
- 1 can kidney beans, drained
- 2 cups beef broth
- 1 packet taco seasoning
- 1 cup corn
Instructions:
Brown the ground beef and onion in a large pot over medium heat. Drain excess fat.
Add garlic and cook for 1 minute.
Stir in tomatoes, beans, broth, and taco seasoning. Bring to a boil.
Reduce heat and simmer for 15-20 minutes.
Add corn and cook for 3-5 minutes more.

Cabbage Roll Soup
You’ll need:
- 1 lb ground beef
- 1 onion, diced
- 2 carrots, chopped
- 4 cups chopped cabbage
- 1 can diced tomatoes
- 2 tbsp tomato paste
- 4 cups beef broth
- 1/2 cup uncooked rice
- 2 cloves garlic, minced
- 1 tsp paprika

- 1 cup elbow macaroni
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Shredded cheese for topping
Instructions:
Brown the ground beef with onion and bell pepper in a large pot. Drain excess fat.
Add garlic and cook for 1 minute.
Stir in beans, tomatoes, broth, and spices. Bring to a boil.

- 1/2 cup sour cream

- Fresh parsley, chopped
Instructions:
Brown the ground beef in a large pot. Add onions and garlic, cooking until soft.
Toss in mushrooms and cook for 5 minutes.
Pour in beef broth and cream of mushroom soup. Stir well.
Add Worcestershire sauce, salt, and pepper. Bring to a boil.
Add egg noodles and cook until tender.
Remove from heat and stir in sour cream.
Sprinkle with fresh parsley before serving.

Spicy Beef Noodle Soup
You’ll need:
- 1 lb ground beef
- 8 cups beef broth
- 8 oz rice noodles
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tbsp ginger, grated
- 2 tbsp spicy bean paste
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Green onions for garnish
Instructions:
Brown the ground beef in a large pot. Remove and set aside.
In the same pot, sauté onion, garlic, and ginger in sesame oil until fragrant.
Add spicy bean paste and cook for 1 minute.
Pour in beef broth and soy sauce. Bring to a boil.
Add the cooked ground beef back to the pot. Simmer for 15 minutes.
Cook rice noodles separately according to package instructions.
Place noodles in bowls, ladle the hot soup over them.
Garnish with chopped green onions and serve hot.

Tomato Basil Beef Soup
Ingredients:
- 1 lb ground beef
- 1 onion, diced

- 1 cup milk
- 1/4 cup flour
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions:
Brown the beef in a large pot. Drain excess fat.
Add onion, carrots, celery, and garlic. Cook until softened.
Stir in potatoes and beef broth. Bring to a boil, then simmer until potatoes are tender.
Mix flour and milk in a separate bowl. Add to the pot and stir.
Add cheese and stir until melted.

Hamburger Helper Soup
You’ll need:
- 1 lb ground beef
- 1 box Hamburger Helper (cheese sauce mix and pasta)
- 4 cups water
- 1 tsp dried basil
- 1/4 tsp black pepper
- 1 can mixed vegetables (optional)
Instructions:
Brown the beef in a large pot. Drain excess fat.
Add water, cheese sauce mix, basil, and pepper. Stir well.
Bring to a boil, then reduce heat and simmer for 10 minutes.
Stir in pasta and mixed vegetables (if using).
Cook until pasta is tender, about 5-7 minutes.
