There are many types of pasta soups to try. You might like a creamy chicken noodle soup or a hearty beef and vegetable soup with shell pasta. Vegetarian options like minestrone are also yummy. No matter what kind you choose, pasta soups are sure to hit the spot and leave you feeling cozy.

Pasta E Fagioli

You’ll need:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 cans kidney beans
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup small pasta
  • Italian herbs
  • Salt and pepper
  • Olive oil
  • Grated Parmesan cheese

Instructions:


  1. Brown the beef in a large pot. Set aside.



  2. Sauté onion, carrots, celery, and garlic in olive oil until soft.



  3. Add beef, beans, tomatoes, broth, and herbs. Simmer for 15-20 minutes.

Instructions:
