Chicken And Rice Soup

- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat. Add carrots, celery, and onion. Cook until soft, about 5 minutes.
Add chicken breasts and broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
Remove chicken and shred it with two forks. Return chicken to the pot.
Stir in rice and cook for 20 minutes or until rice is tender.

Lemon Rice Soup
Ingredients:
- 6 cups chicken broth
- 1/2 cup rice
- 2 eggs
- 1/4 cup lemon juice
- 1 diced onion
- 2 diced carrots
- 2 diced celery stalks
- 2 minced garlic cloves
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Heat olive oil in a pot over medium heat. Add onion, carrots, and celery. Cook for 5-7 minutes.
Stir in garlic and cook for another minute.
Pour in chicken broth and bring to a boil. Add rice, reduce heat, and simmer for 20 minutes.
In a bowl, whisk eggs and lemon juice together.
Slowly pour some hot broth into the egg mixture while whisking.
Gradually add the egg mixture back into the pot, stirring constantly.

Creamy Chicken And Rice Soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 cup uncooked rice
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup milk or cream
- Salt and pepper to taste
- Optional: 1 tablespoon Italian seasoning
Instructions:

You’ll need:
- 1 onion, diced
- 2 carrots, chopped

- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil

Add garlic and Italian seasoning. Cook for 1 minute until fragrant.

Chicken Tortilla Rice Soup
Ingredients:
- 2 chicken breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can black beans, drained
- 1 can corn
- 1 can diced tomatoes
- 6 cups chicken broth
- 1 cup uncooked rice
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Tortilla chips for serving
Instructions:
In a large pot, sauté onion and garlic until soft.
Add chicken, broth, tomatoes, beans, corn, rice, and spices.
Bring to a boil, then reduce heat and simmer for 25 minutes.
Remove chicken, shred it, and return to the pot.
Cook for another 5 minutes until rice is tender.
Serve hot with tortilla chips on top.
Thai Coconut Chicken Rice Soup
Ingredients:
- 2 cups cooked rice
- 2 cups chicken broth
- 1 can coconut milk
- 2 cups shredded cooked chicken
- 1 cup sliced mushrooms
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 2 tsp ginger, minced
- 2 cloves garlic, minced
- 1 Thai chili, sliced (optional)
- Fresh cilantro for garnish
Instructions:
In a large pot, heat a bit of oil and sauté ginger and garlic until fragrant.
Pour in chicken broth and coconut milk. Bring to a simmer.
Add rice, chicken, mushrooms, fish sauce, and lime juice. Cook for 5 minutes.
Taste and adjust seasoning if needed.
Ladle into bowls and top with Thai chili and cilantro.

Mushroom Rice Soup
You’ll need:
- 1 cup wild rice blend
- 8 oz mushrooms, sliced
- 4 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp flour
- 1 cup heavy cream
- Salt and pepper to taste
Instructions:
Cook the rice according to package directions.
In a large pot, sauté onions and garlic in butter until soft.
Add mushrooms and cook until they release their liquid.
Stir in flour and cook for 1 minute.
Slowly pour in broth, stirring constantly.
Add cooked rice and simmer for 10 minutes.
Stir in cream and heat through.
Season with salt and pepper.

Tomato Rice Soup
Ingredients:
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 can (28 oz) diced tomatoes

- Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until soft.
Pour in diced tomatoes with their juice and vegetable broth. Bring to a boil.
Add rice, basil, salt, and pepper. Stir well.
Reduce heat, cover, and simmer for 15-20 minutes until rice is tender.

Spicy Chicken And Rice Soup
Ingredients:
- 2 chicken breasts, diced
- 1 cup rice
- 1 onion, chopped
- 1 poblano pepper, diced
- 4 scallions, minced
- 1 can beans, drained
- 6 cups chicken broth
- 2 tsp chile powder
- 1 tsp ancho chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1/4 tsp cayenne
- Salt to taste
- Oil for cooking
Instructions:
Heat oil in a pot. Add onion and poblano pepper. Cook for 8-10 minutes.
Stir in scallions, beans, and spices. Add a pinch of salt.
Pour in broth and add chicken. Bring to a boil.
Add rice and simmer until chicken is cooked and rice is tender, about 20 minutes.
Taste and adjust seasoning if needed. Serve hot and enjoy your spicy soup!
Egg Drop Rice Soup
Ingredients:
- 4 cups vegetable or chicken broth
- 1/2 cup cooked rice
- 2 eggs, beaten
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 tsp white pepper
- 2 green onions, chopped
Instructions:
Bring the broth to a boil in a pot. Add the cooked rice and stir.
Reduce heat to medium. Slowly pour the beaten eggs into the soup while stirring gently.
Add soy sauce, sesame oil, and white pepper. Stir to combine.
Simmer for 2-3 minutes until the egg is cooked.

Chicken Gnocchi Rice Soup
Ingredients:
- 1 lb boneless chicken breast, diced
- 1 cup gnocchi
- 1/2 cup white rice
- 4 cups chicken broth
- 1 cup carrots, chopped

- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup spinach leaves
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp dried thyme

Instructions:
In a large pot, melt butter and sauté onions, carrots, and celery until soft.
Add garlic and cook for 1 minute. Stir in chicken and cook until no longer pink.
Pour in broth and add rice. Bring to a boil, then simmer for 15 minutes.
Add gnocchi and cook for 3-4 minutes until they float to the surface.
Stir in cream, spinach, and thyme. Simmer for 5 minutes.

Beef And Rice Soup
You’ll need:
- 1 lb ground beef
- 1 cup rice
- 6 cups beef broth
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced

Instructions:
Brown the beef in a large pot. Drain excess fat.

Italian Wedding Rice Soup
Ingredients:
- 1 pound small meatballs
- 8 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, chopped
- 1/2 cup white rice
- 2 cups fresh spinach
- 1/4 cup parsley, chopped
- 2 green onions, sliced
Instructions:
Cook meatballs in the oven at 450°F for 10 minutes until golden brown.
In a large pot, bring chicken broth to a boil.
Add carrots, celery, and rice to the broth. Simmer for 15 minutes.
Add cooked meatballs to the pot. Simmer for 5 more minutes.
Stir in spinach, parsley, and green onions. Cook until spinach wilts.
Taste and adjust seasoning if needed.

Miso Rice Soup
Ingredients:
- 2 cups water
- 1 dashi packet
- 2 tablespoons miso paste
- 1/4 block soft tofu, cubed
- 1/2 cup cooked rice
- 1/4 cup frozen peas and carrots
- 1 green onion, sliced
Instructions:
Bring water and dashi to a boil in a pot.
Reduce heat and simmer for 2 minutes.
Add tofu, rice, peas, and carrots. Cook for 1 minute.
Remove from heat. Stir in miso paste until dissolved.
Pour into bowls and top with green onions.

Cilantro Lime Rice Soup
Ingredients:
- 6 cups chicken broth
- 2 cups cooked rice
- 2 cups shredded chicken
- 1 can black beans, drained
- 1 cup corn kernels
- 1/2 cup chopped cilantro
- 2 limes, juiced
- 1 diced onion
- 2 minced garlic cloves
- 1 tsp cumin
- Salt and pepper to taste
Instructions:
In a large pot, sauté onion and garlic until soft.
Add chicken broth, rice, chicken, beans, and corn. Bring to a boil.
Reduce heat and simmer for 15 minutes.
Stir in cilantro, lime juice, cumin, salt, and pepper.

- 1 cup wild rice blend
- 8 oz cremini mushrooms, sliced
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, sliced

- 2 cups water
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions:
Melt butter in a large pot over medium heat. Add onions, carrots, celery, and garlic. Cook until soft, about 5 minutes.
Add mushrooms and cook for another 5 minutes.
Stir in wild rice blend, broth, and water. Bring to a boil, then reduce heat and simmer for 45 minutes or until rice is tender.
Pour in heavy cream and stir. Season with salt and pepper.

Curry Chicken And Rice Soup
Ingredients:
- 2 cups cooked chicken, diced
- 1 cup uncooked rice
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced

- 2 tbsp curry powder
- 2 tbsp butter
- Salt to taste
Instructions:
Cook rice according to package directions.

- 8 cups vegetable broth
- 1 can diced tomatoes
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder

Instructions:
Heat olive oil in a large pot. Add onions, celery, and carrots. Cook until soft.
Add garlic and bell pepper. Sauté for 2 minutes.

Corn And Rice Chowder
Here’s what you’ll need:
- 1 cup wild rice
- 4 cups chicken broth
- 2 cups corn kernels
- 1 onion, diced
- 2 celery stalks, chopped
- 2 carrots, diced
- 2 bacon slices, chopped
- 1 cup half-and-half
- Salt and pepper to taste
Instructions:
Cook the wild rice according to package directions. Set aside.
In a large pot, cook bacon until crispy. Remove and set aside.
Sauté onion, celery, and carrots in the bacon fat for 5 minutes.
Add chicken broth and bring to a boil. Simmer for 15 minutes.
Stir in corn and cooked rice. Simmer for 5 more minutes.

- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
Heat olive oil in a large pot. Add onions and cook until soft.
Stir in garlic and cook for another minute.
Pour in chicken broth and crushed tomatoes. Bring to a boil, then simmer for 15 minutes.
Add cooked rice and simmer for 5 more minutes.

Zucchini And Rice Soup
You’ll need:
• 1 onion, diced
• 2 cloves garlic, minced
• 2 zucchini, sliced
• 1/2 cup rice
• 4 cups vegetable or chicken broth
• 2 tablespoons olive oil
• Salt and pepper to taste
• Optional: grated Parmesan cheese
Instructions:
Heat oil in a pot over medium heat. Add onion and garlic, cook until soft.
Add zucchini and rice, stir for 1 minute.
Pour in broth, bring to a boil. Reduce heat and simmer for 15-20 minutes until rice is cooked.
