Tomato Soup
Ingredients:
- 4 cups fresh tomatoes
- 1 cup vegetable broth
- 1 shallot, peeled
- 2 garlic cloves
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tbsp tomato paste
- 1 tsp sugar
- Salt and pepper to taste
Instructions:
Put all ingredients in your Vitamix container.
Secure the lid and start blending on low speed.
Slowly increase to high speed. Blend for 5-6 minutes until steam escapes from the lid.
Pour into bowls and enjoy your hot, creamy tomato soup!
Broccoli Cheese Soup
Ingredients:
- 3 cups broccoli florets
- 1 carrot, chopped
- 1/4 onion, diced
- 1 cup shredded cheddar cheese
- 2 cups milk
- 1 vegetable bouillon cube
- Salt and pepper to taste
Instructions:
Add all ingredients to your Vitamix container in the order listed.
Secure the lid and select the Hot Soup program.
If your Vitamix doesn’t have this program, start on the lowest speed and quickly increase to highest.
Blend for about 5-6 minutes until smooth and hot.
Taste and adjust seasoning if needed.
Pour into bowls and enjoy your creamy, cheesy soup!
French Onion and Wild Mushroom Soup
Ingredients:
- Oil
- Onion
- Bay leaf
- Butter
- Seasoning
- Sherry
- Stock
- Dried mushrooms
- Carrots
- Chia seeds
Instructions:
Heat oil in a pan. Add onion and bay leaf. Cook until golden brown.
Add butter and seasoning. Pour in sherry to deglaze. Let it reduce.
Put stock, dried mushrooms, carrots, and chia seeds in your Vitamix.
Blend until smooth and hot.
Pour the soup into bowls and enjoy your tasty French Onion and Wild Mushroom Soup!
Jackfruit Soup
Ingredients:
- 1 can young jackfruit, drained and shredded
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
Instructions:
Add all ingredients to your Vitamix container.
Blend on high speed for 5-6 minutes until hot and smooth.
Pour into bowls and enjoy your comforting jackfruit soup!
Butternut Squash Soup
Ingredients:
- 2 cups cubed butternut squash
- 1 apple, cored and chopped
- 1 celery stalk, chopped
- 1 carrot, chopped
- 2 cups vegetable broth or water
- 1/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 tablespoon coconut oil
Instructions:
Add all ingredients to your Vitamix in the order listed.
Secure the lid on your blender.
Start blending on the lowest speed, then quickly increase to the highest speed.
Blend for 5 minutes and 45 seconds or until steam escapes from the lid.
Pour into bowls and enjoy your hot, creamy soup!
Roasted Cauliflower Soup
Ingredients:
- 1 head of cauliflower
- 2 tablespoons olive oil
- Salt to taste
- 3 cups water or chicken broth
- 1/4 cup heavy cream
- Pinch of nutmeg (optional)
- Squeeze of lemon juice (optional)
Instructions:
Cut cauliflower into florets. Toss with olive oil and salt.
Roast at 400°F for 25-30 minutes until golden brown.
Place roasted cauliflower in your Vitamix blender.
Add water or broth. Blend on medium speed for 30 seconds.
Pour in cream, nutmeg, and lemon juice if using. Blend for another 30 seconds.
If you want a hot soup, blend on high for 5-6 minutes.
Taste and adjust seasoning as needed. Enjoy your creamy soup!
Potato Soup
Ingredients:
- 2 cups milk
- 1 large potato, peeled and cubed
- 1 cup shredded cheddar cheese
- 1/4 cup chopped onion
- 1 tsp dried dill
- 1/2 tsp dried rosemary
- Salt to taste
Instructions:
Add all ingredients to your Vitamix in the order listed.
Secure the lid and run the Hot Soup program.
If your Vitamix doesn’t have this program, start on low speed and quickly increase to high.
Blend for about 5 minutes and 45 seconds until hot and smooth.
Pour into bowls and enjoy your creamy potato soup!
Roasted Red Pepper Tomato Soup
Ingredients:
- 2 red bell peppers, halved and seeded
- 4 ripe tomatoes, halved
- 1 onion, peeled and halved
- 3 garlic cloves
- 2 cups vegetable broth
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
Preheat your oven’s broiler. Place peppers, tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
Broil for 10-15 minutes until vegetables are charred and tender. Let cool slightly.
Add roasted vegetables and broth to your Vitamix container.
Start blending on low speed, then quickly increase to high. Blend for 5-6 minutes until steam appears from the lid.
Taste and adjust seasoning if needed. Pour into bowls and enjoy your homemade soup!
Tortilla Soup
Ingredients:
- 2 cups chicken broth
- 1 can diced tomatoes
- 1/2 cup shredded cheese
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1/2 bell pepper, diced
- 1/2 avocado
- 1 garlic clove
- 1 tablespoon taco seasoning
- Salt to taste
- 1/4 cup cilantro
- 1/2 cup black beans
- 1/4 cup corn
Instructions:
Add all ingredients except beans and corn to your Vitamix blender.
Blend on high speed for 6-7 minutes until steaming.
Add beans and corn, then pulse twice to mix.
Pour into bowls and enjoy your hot, fresh tortilla soup!
Creamy Miso Corn Soup
Ingredients:
- 4 cups fresh corn kernels
- 1 cup vegetable broth
- 2 tablespoons white miso paste
- 1/2 cup cashews, soaked
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
Instructions:
Add all ingredients to your Vitamix blender.
Start blending on low speed, gradually increasing to high.
Blend for about 5-6 minutes until the soup is hot and creamy.
Taste and adjust seasoning if needed.
Pour into bowls and enjoy your warm, comforting soup!
Lentil Soup
Ingredients:
- 1 cup dried lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp thyme
- 1 tsp oregano
- Salt and pepper to taste
Instructions:
Rinse lentils and add to your Vitamix container.
Add chopped veggies, broth, and spices.
Secure the lid and blend on low for 1 minute.
Increase speed to high and blend for 5-6 minutes until steam appears.
Pour into bowls and enjoy your warm, comforting lentil soup!
Corn Chowder
Ingredients:
- 1 onion, diced
- 2 tablespoons olive oil
- 2 potatoes, cubed
- 2 cups vegetable stock
- 2 cups corn kernels
- 1 cup coconut milk
- Salt and pepper to taste
Instructions:
Sauté onion in olive oil until soft, about 5 minutes.
Add potatoes, stock, and 1 cup of corn. Simmer until potatoes are tender.
Pour mixture into your Vitamix container.
Blend on low speed, then increase to high. Blend for 10 seconds.
Return soup to the pot. Stir in remaining corn and coconut milk.
Heat through and season with salt and pepper.
Serve hot and enjoy your creamy corn chowder!
Split Pea Soup
Ingredients:
- 1 cup split peas
- 1 small onion, diced
- 2 tbsp olive oil
- 60 oz hot water
- 3 tbsp ketchup
- Salt and pepper to taste
Instructions:
Add all ingredients to your Vitamix container.
Secure the lid and start blending at low speed.
Slowly increase to high speed and blend for 5-6 minutes.
The friction from blending will heat the soup.
Pour into bowls and enjoy your hot, creamy split pea soup!
Cuban Bean And Potato Soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 1 bell pepper, chopped
- 3 garlic cloves, minced
- 1 tablespoon vinegar
- 1 teaspoon cumin
- 1 bay leaf
- 1 teaspoon oregano
- Salt to taste
- 2 cups cooked black beans
- 2 potatoes, cubed
- 4 cups vegetable broth
- Sour cream (optional)
Instructions:
Heat olive oil in a pan. Add onions, peppers, and garlic. Cook for 8-10 minutes.
Pour in vinegar. Add cumin, bay leaf, oregano, and salt.
Transfer mixture to your Vitamix blender. Add beans, potatoes, and broth.
Blend on low, then increase to high. Blend until smooth.
Pour soup into a pot. Simmer for 15 minutes or until potatoes are tender.
Serve hot. Top with a dollop of sour cream if you like.
Black Bean Soup
Ingredients:
- 2 cups vegetable stock
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup chickpeas
- 1/2 onion, chopped
- 2 garlic cloves
- 1 tablespoon lime juice
- 1 jalapeño pepper, seeded
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
Add all ingredients to your Vitamix container in the order listed.
Secure the lid and run the Hot Soup program. If your model doesn’t have this, blend on low speed, then quickly increase to high. Blend for about 6 minutes.
Pour into bowls and serve hot. You can top with cilantro, sour cream, or diced avocado if you like.
Sweet Potato Chorizo Soup
Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 8 oz chorizo sausage, casings removed
- 1 small onion, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tsp olive oil
- Salt and pepper to taste
- Optional: fried sage leaves for garnish
Instructions:
Heat olive oil in a large pot over medium heat. Add chorizo and cook until browned, about 5 minutes.
Add diced onion and cook until softened, about 3 minutes.
Stir in sweet potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
Use an immersion blender to puree the soup until smooth. If you don’t have one, carefully transfer to a blender in batches.
Stir in heavy cream and heat through. Season with salt and pepper to taste.
Serve hot, garnished with fried sage leaves if desired. Enjoy your comforting Sweet Potato Chorizo Soup!
Creamy Wild Rice Soup
Ingredients:
- 1 cup wild rice
- 4 cups vegetable broth
- 1 cup cashews
- 1 can cannellini beans
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions:
Rinse the wild rice and cook it in 3 cups of vegetable broth for 30 minutes.
Blend cashews, beans, and 1 cup of broth in your Vitamix until smooth.
In a pot, sauté carrots, celery, onion, and garlic until soft.
Add the cooked rice, cashew mixture, thyme, and bay leaves to the pot.
Simmer for 15 minutes, stirring occasionally.
Season with salt and pepper to taste.
Remove bay leaves before serving your creamy wild rice soup.
Beet And Ginger Soup
Ingredients:
- 3 medium beets, peeled and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1-inch piece ginger, peeled and grated
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Greek yogurt for garnish
Instructions:
Heat olive oil in a pot over medium heat. Add onion and cook until soft.
Add garlic and ginger. Cook for 1 minute.
Add beets and broth. Bring to a boil, then simmer for 20 minutes.
Let cool slightly. Pour into your Vitamix blender.
Blend on high for 5-7 minutes until smooth and hot.
Season with salt and pepper.
Serve in bowls. Top with a dollop of Greek yogurt if desired.
Chilled Cucumber Gazpacho
Ingredients:
- 2 cucumbers, peeled and chopped
- 1/2 green bell pepper, chopped
- 1/4 onion, chopped
- 1 garlic clove
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- Salt and pepper to taste
- Optional: 1/4 cup water to thin
Instructions:
Add cucumbers, bell pepper, onion, and garlic to your Vitamix blender.
Pour in olive oil and vinegar.
Blend on low speed, gradually increasing to medium (Variable 3).
Blend for 20 seconds, using the tamper to push ingredients down.
Season with salt and pepper.
If needed, add water slowly to reach desired consistency.
Chill for at least 30 minutes before serving.
Pour into bowls and enjoy your refreshing cucumber gazpacho!
Creamy Butter Bean Soup
Ingredients:
- 2 cans butter beans, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tablespoon olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions:
Add olive oil, onion, and garlic to your Vitamix container. Blend on low for 30 seconds.
Add butter beans, vegetable broth, coconut milk, thyme, salt, and pepper.
Secure the lid and start blending on low. Quickly increase to high speed.
Blend for 5-6 minutes or until steam escapes from the lid.
Pour into bowls and enjoy your creamy butter bean soup!
Zucchini And Spinach Soup
Ingredients:
- 2 zucchini, chopped
- 2 cups fresh spinach
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 potato, cubed
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
Heat olive oil in a pan. Add onion and garlic, cook until soft.
Add zucchini and potato. Cook for 5 minutes.
Pour in broth and bring to a boil. Simmer for 15 minutes.
Add spinach and cook for 2 more minutes.
Transfer half the mixture to your Vitamix container.
Blend on high speed until smooth and steaming.
Repeat with the remaining mixture.
Season with salt and pepper.
Serve hot and enjoy your homemade soup!
Roasted Tomato Basil Soup
Ingredients:
- 2 lbs tomatoes, halved
- 4 garlic cloves
- 3 tbsp olive oil
- Salt and pepper
- 1 cup vegetable broth
- 1/4 cup fresh basil leaves
- 1 tbsp tomato paste
- 1 tsp sugar
Instructions:
Preheat your oven to 400°F (200°C).
Place tomatoes and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
Roast for 40-45 minutes until tomatoes are lightly charred.
Add roasted tomatoes, garlic, broth, basil, tomato paste, and sugar to your Vitamix.
Blend on low speed, gradually increasing to high. Blend for 6 minutes or until steam appears.
Taste and adjust seasoning if needed. Serve hot and enjoy!
Carrot Ginger Soup
Ingredients:
- 8 carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
Roast carrots, onion, and garlic in the oven at 400°F for 30 minutes.
Add roasted veggies, ginger, broth, and olive oil to your Vitamix.
Blend on high for 5-6 minutes or use the Hot Soup program.
Season with salt and pepper.
Pour into bowls and enjoy your smooth, warming soup!
Mushroom Soup With Gruyere Toast
Ingredients:
- 1 lb mixed mushrooms, sliced
- 2 shallots, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- 4 slices crusty bread
- 4 oz Gruyere cheese, grated
Instructions:
Heat butter and oil in a large pot. Add shallots and garlic, cook until soft.
Add mushrooms and thyme. Cook until mushrooms release their liquid.
Pour in broth, bring to a boil. Reduce heat and simmer for 10 minutes.
Transfer soup to your Vitamix blender. Blend until smooth.
Return soup to pot, stir in cream. Season with salt and pepper.
Toast bread slices. Top with grated Gruyere.
Broil toast until cheese melts and bubbles.
Serve hot soup with cheesy toast on the side.
Creamy Avocado And Lime Soup
Ingredients:
- 2 ripe avocados
- 2 cups vegetable broth
- 1/4 cup fresh lime juice
- 1/4 cup cilantro leaves
- 1 clove garlic
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions:
Cut avocados in half, remove pits, and scoop out flesh.
Add avocado and all other ingredients to your Vitamix blender.
Blend on high for 5-6 minutes until smooth and hot.
Taste and adjust seasoning if needed.
Pour into bowls and enjoy your creamy soup!
