Beef Stew

You’ll need:

  • 2 lbs beef chuck, cubed
  • 1/4 cup flour
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, chopped
  • 2 celery stalks, sliced
  • 2 potatoes, cubed
  • 4 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • Salt and pepper to taste

Instructions:


  1. Coat beef in flour, salt, and pepper.



  2. Brown beef in oil in a large pot over medium heat.



  3. Add onions, carrots, and celery. Cook for 5 minutes.



  4. Pour in broth, wine, and add bay leaves.



  5. Bring to a boil, then simmer for 1.5 hours.



  6. Add potatoes and cook for 30 more minutes.



  7. Season to taste and serve hot.


Easy Sausage Casserole

Ingredients:

  • 1 pound ground pork sausage
  • 1 onion, chopped
  • 1 green pepper, diced
  • 1 can diced tomatoes
  • 8 oz wide egg noodles
  • 1/2 cup sour cream
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • Water

Instructions:


  1. Brown sausage, onions, and green pepper in a large skillet. Drain excess grease.



  2. Add tomatoes, breaking them into smaller pieces.



  3. Stir in noodles, sour cream, sugar, salt, and chili powder.



  4. Add just enough water to cover the noodles.

Ingredients:

  • 1 pound smoked sausage, sliced
  • 4 cups frozen hash browns

Instructions:

Instructions:

  4. Stir in chestnuts and orzo. Cook for another 10 minutes.

Ingredients:

  • 2 chicken breasts
  • 1 cup quinoa
  • 1 can black beans
  • 1 can diced tomatoes
  • 1 zucchini, diced
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:


  1. Rinse quinoa and cook according to package directions.



  2. In a large pot, simmer chicken in broth until cooked through. Shred with two forks.



  3. Add diced tomatoes, black beans, zucchini, cumin, and chili powder to the pot.



  4. Stir in cooked quinoa and simmer for 10 minutes.

Chicken Casserole With Herby Dumplings

Ingredients:

  • 1 lb chicken thighs, cut into chunks
  • 1 cup red wine
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 8 oz mushrooms, sliced
  • 2 garlic cloves, minced
  • 2 tbsp flour
  • 1 tsp thyme
  • Salt and pepper to taste

For the dumplings:

  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp fresh herbs (parsley, chives, thyme)
  • 1/2 cup milk
  • 2 tbsp butter, melted

Instructions:


  1. Brown chicken in a large pot. Remove and set aside.



  2. Sauté veggies in the same pot until soft.



  3. Add flour, stir for 1 minute. Pour in wine and broth, stirring to combine.



  4. Return chicken to pot. Add thyme, salt, and pepper. Simmer for 1 hour.



  5. Mix dumpling ingredients in a bowl until just combined.



  6. Drop spoonfuls of dumpling batter onto the simmering casserole.



  7. Cover and cook for 15-20 minutes until dumplings are fluffy and cooked through.

Beef Bourguignon

Ingredients:

  • 2.5 lbs beef, cubed
  • 8 oz bacon, diced
  • 1 cup red wine
  • 2 cups beef stock
  • 2 carrots, chopped
  • 10 pearl onions
  • 8 oz mushrooms
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 2 sprigs thyme
  • Salt and pepper
  • 2 tbsp flour
  • 2 tbsp butter

Instructions:


  1. Cook bacon in a large pot. Remove and set aside.



  2. Season beef with salt and pepper. Brown in batches. Set aside.



  3. Sauté onions, carrots, and garlic in the pot.



  4. Add beef and bacon back to the pot. Stir in flour.



  5. Pour in wine and stock. Add tomato paste, bay leaves, and thyme.



  6. Simmer for 2-3 hours until beef is tender.



  7. Sauté mushrooms in butter. Add to the pot.



  8. Cook for 30 more minutes. Serve hot.


Bigos (Polish Hunter’s Stew)

Ingredients:

  • 1 lb sauerkraut, drained
  • 1 lb fresh cabbage, chopped
  • 1 lb kielbasa sausage, sliced
  • 1/2 lb bacon, diced
  • 1 lb pork shoulder, cubed
  • 1 large onion, diced
  • 2 apples, peeled and diced
  • 1/4 cup dried prunes, chopped
  • 2 tbsp tomato paste
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp caraway seeds
  • Salt and pepper to taste

Instructions:


  1. Brown the bacon in a large pot. Remove and set aside.



  2. Brown the kielbasa and pork in the bacon fat. Remove and set aside.



  3. Sauté the onion in the pot until soft.



  4. Add sauerkraut, cabbage, meats, apples, prunes, tomato paste, wine, and spices.



  5. Simmer on low heat for 2-3 hours, stirring occasionally.



  6. Season with salt and pepper to taste.



  7. Serve hot with crusty bread.


You can refrigerate leftovers for up to 5 days. The flavors will continue to develop, making it even tastier!

Leftover Turkey Casserole

Ingredients:

  • 3 cups cooked turkey, diced
  • 2 cups mixed vegetables
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded cheese
  • 2 cups leftover mashed potatoes
  • 1/2 cup breadcrumbs

Instructions:


  1. Preheat your oven to 375°F (190°C).



  2. Mix turkey, vegetables, soup, and milk in a large bowl.



  3. Pour mixture into a greased 9×13 inch baking dish.



  4. Spread mashed potatoes over the top.



  5. Sprinkle with cheese and breadcrumbs.



  6. Bake for 30-35 minutes until bubbly and golden.



  7. Let cool for 5 minutes before serving.


Cajun Chicken Gumbo

Ingredients:

  • 2 lbs chicken, cut into pieces
  • 1 lb smoked sausage, sliced
  • 1/2 cup vegetable oil
  • 1/2 cup flour
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 cup okra, sliced
  • 2 tbsp Cajun seasoning
  • 2 bay leaves
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions:


  1. Make a roux by heating oil in a large pot and whisking in flour. Cook until dark brown, stirring constantly.



  2. Add onion, bell pepper, celery, and garlic. Cook for 5 minutes.



  3. Stir in chicken broth, okra, Cajun seasoning, and bay leaves. Bring to a boil, then simmer for 30 minutes.



  4. Add chicken and sausage. Simmer for 1 hour until meat is tender.



  5. Season with salt and pepper. Remove bay leaves.



  6. Serve hot over rice. Enjoy your tasty Cajun chicken gumbo!


Spiced Beef With Stout & Prunes

You’ll need:

  • 2 lbs beef chunks
  • 1 cup flour
  • 2 tsp each: salt, pepper, sage, allspice
  • 2 tbsp oil
  • 1 onion, diced
  • 1 bottle stout beer
  • 1 cup prunes
  • 1/2 cup chestnuts

Instructions:


  1. Mix flour with spices in a bag. Add beef and coat well.



  2. Heat oil in a large pot. Brown the beef in batches.



  3. Sauté onion until soft. Return beef to pot.



  4. Pour in stout beer. Add prunes.



  5. Cover and simmer on low for 2-2.5 hours until beef is tender.



  6. Add chestnuts for the last 10 minutes.



  7. Serve hot with mashed potatoes or crusty bread.


Pesto Chicken Stew With Cheesy Dumplings

Ingredients:

  • 12-15 chicken thighs, skin removed
  • 200g smoked bacon lardons
  • 1 large onion, chopped
  • 4 celery sticks, chopped
  • 1 liter chicken stock
  • 200g frozen peas
  • 100g kale and basil pesto
  • Fresh basil, chopped

For the dumplings:

  • 140g cold butter, diced
  • 250g self-raising flour
  • 50g Parmesan cheese, grated
  • 50g vintage cheddar, grated
  • 150ml water

Instructions:


  1. Brown the chicken in a large ovenproof dish. Set aside.



  2. Cook bacon, onion, and celery in the same dish.



  3. Return chicken to the dish. Add stock and simmer for 30 minutes.



  4. Preheat oven to 200°C/180°C fan.



  5. Add peas and pesto to the stew.



  6. For dumplings, rub butter into flour. Mix in cheese and water to form a dough.



  7. Shape dough into small balls and place on top of stew.



  8. Bake for 25 minutes until dumplings are golden.


Sausage Casserole With Garlic Toasts

Ingredients:

  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • 2 cups egg noodles
  • 1 cup shredded cheddar cheese
  • 4 slices bread
  • 2 tbsp butter, softened
  • 1/4 tsp garlic powder

Instructions:


  1. Brown sausage in a large skillet. Add onion and garlic, cook until soft.



  2. Stir in tomatoes, broth, and seasoning. Bring to a boil.



  3. Add noodles, cover and simmer for 10 minutes.



  4. Sprinkle cheese on top and let melt.



  5. For garlic toasts: Mix butter with garlic powder, spread on bread slices.



  6. Broil bread until golden brown.



  7. Serve casserole with garlic toasts on the side.


Mediterranean Vegetables With Lamb

Ingredients:

  • 1 pound lamb shoulder, cubed
  • 2 onions, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:


  1. Preheat your oven to 325°F (165°C).



  2. Heat olive oil in a large casserole dish. Brown the lamb in batches and set aside.



  3. Add onions, carrots, and celery to the dish. Cook for 10 minutes until soft.



  4. Stir in garlic and cinnamon. Cook for 2 more minutes.



  5. Return lamb to the dish. Add tomatoes, broth, oregano, salt, and pepper.



  6. Cover and bake for 1.5 hours or until lamb is tender.



  7. Serve hot with crusty bread or over rice.


Smoky Mexican Meatball Stew

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 cup corn
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions:


  1. Mix beef, breadcrumbs, half the onion, garlic, and spices. Form into meatballs.



  2. Brown meatballs in a pot, then set aside.



  3. Sauté remaining onion in the pot.



  4. Add tomatoes, beans, corn, and broth. Bring to a boil.



  5. Return meatballs to the pot. Simmer for 20 minutes.



  6. Season with salt and pepper. Serve hot.


Chicken & Red Wine Casserole With Herby Dumplings

Ingredients:

  • 6 chicken breasts
  • 3 tbsp flour
  • 3 tbsp olive oil
  • 3 onions, cut in wedges
  • 200g smoked bacon lardons
  • 3 garlic cloves
  • 1 bottle red wine
  • 2 cups chicken stock
  • 200g mushrooms

For the dumplings:

  • 1 cup self-raising flour
  • 1/2 cup breadcrumbs
  • 1 tsp mustard
  • 2 tbsp butter
  • Fresh thyme and parsley
  • 2 eggs

Instructions:


  1. Brown chicken in oil. Set aside.



  2. Cook onions, bacon, and garlic in the same pan.



  3. Add flour, wine, and stock. Simmer.



  4. Put chicken back in. Cook for 40 minutes.



  5. Add mushrooms. Cook for 2 more hours.



  6. Mix dumpling ingredients. Form into balls.



  7. Place dumplings on top of casserole.



  8. Bake for 20 minutes until dumplings are puffy.



  9. Serve hot and enjoy your cozy meal!


Favorite Christmas Breakfast Casserole

You’ll need:

  • 1 pound breakfast sausage
  • 6 eggs
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 6 slices bread, cubed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions:


  1. Cook sausage in a skillet over medium heat until browned. Drain fat.



  2. In a large bowl, whisk eggs, milk, salt, and pepper.



  3. Add cooked sausage, cheese, and bread cubes to the egg mixture. Stir gently.



  4. Pour into a greased 9×13 inch baking dish.



  5. Cover and refrigerate overnight.



  6. In the morning, preheat oven to 350°F (175°C).



  7. Bake uncovered for 45-50 minutes until set and golden brown.

  • 1 tsp caraway seeds (optional)

Instructions:

  2. Cut 4 bread slices into cubes. Place in the dish. Tear the other 4 slices into pieces.

Ingredients:

  • 2 cups leftover turkey, cubed
  • 1 cup leftover stuffing

  • 1/2 cup gravy
  • 1/4 cup milk
  • 1 cup shredded cheese

Instructions:

  3. Spread the stuffing evenly on the bottom of the dish.



  4. Mix turkey and vegetables in a bowl. Spread over stuffing.
