Ingredients
  

  • 2 tbsp olive oil
  • 2 chicken breasts boneless, skinless
  • 8 ounces mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 tbsp all-purpose flour
  • 8 ounces pasta (penne, fettuccine, or your choice)
  • ½ cup freshly grated Parmesan cheese
  • fresh parsley chopped (for garnish)
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta: Bring a pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • Sauté the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest.
  • Sauté the mushrooms and garlic: In the same skillet, add another tablespoon of olive oil. Add the sliced mushrooms and minced garlic. Sauté for about 5 minutes, or until the mushrooms are tender and golden brown.
  • Make the sauce: Sprinkle the flour over the mushrooms and garlic. Stir well to coat everything evenly. Slowly pour in the chicken broth, stirring constantly to avoid lumps. Simmer for 2-3 minutes, or until the sauce has thickened.
  • Slice the chicken and add it to the skillet: Slice the cooked chicken breasts into strips. Add the chicken strips and the cooked pasta to the skillet with the mushroom sauce. Toss everything together until well coated with the sauce.
  • Serve and garnish: Transfer the chicken and mushroom pasta to serving plates or bowls. Sprinkle freshly grated Parmesan cheese over the top. Garnish with chopped fresh parsley for an extra pop of color and freshness.

- For a vegetarian option, skip the chicken and add extra mushrooms or roasted vegetables.
- Customize the thickness of the sauce by adjusting the amount of flour used.
